The Park


A few weekends ago the hubs and I and his family spent the weekend in Estes Park. What beautiful weather and it is always great to do some snowshoeing. The snow was hard to come by so one day was just hiking but still a fun weekend away.


We hiked in Rocky Mountain National Park which provided beautiful mountain views, rivers made of ice and quiet snowshoeing trails.



Colorado in the winter is so wonderful!

Only once a year are you allowed to have cake for breakfast (well....cake that is justified anyway). Today I celebrate with cake for breakfast and what wonderful chocolate pumpkin cake it is too.

(Fingers Crossed)

It is official...spring is around the corner. 50 degree temps outside, snow melting, walks to the cupcake store and the thought of wearing short sleeves has me excited for the spring. Since I'm talking about spring we'll probably have a huge snow storm this weekend but for now I'll be excited about the change in seasons.


For the first time in our married life my husband and I are 'attempting' to plant a garden full of the veggies that we normally consume. Green beans, peppers, tomatoes, carrots...... Since most of our married life has been spent in the desert we haven't been able to grow our own vegetables so this year will be a year to learn how to garden and hopefully (fingers crossed) we'll get some yummy veggies out of it. I have big plans for learning how to can and preserve vegetables so our garden is going to have to produce more than a handful of veggies to make this possible but (fingers crossed) this gardening thing wont be too difficult.


If you asked me if I had a green thumb I'd tell you 'heck no'. We've never had a green plant in our home the past 4 years and I nearly killed off the shrubs in the front yard when the drip system broke and it didn't cross my mind to water the plants....so....here goes nothing (fingers crossed)!


The hubby and I stopped at the local hardware store this past weekend to pick up the beginning of our gardening needs. Seeds, dirt pods, temporary indoor growing container -- let's get started! We're starting our seeds indoors as it allows for almost two additional months of growing time. Well transport the sprouted seeds (fingers crossed) outdoors come May.


Now we wait for a bit warmer temperatures to come and the seeds to grow (fingers crossed). In the meantime we'll get the outdoor garden ready for planting and dog proofed so that all our hard work (fingers crossed) doesn't become a snack to the 4 legged creatures in our family.

One day we'll get to enjoy all of this goodness (fingers crossed)!

Balanced

Don't get me wrong...I like to be healthy and for the most part, minus the M&Ms, I eat a balanced and healthy diet. We like whole grains, bulgar wheat, quinoa, and lots of veggies around this house. There are just some times when life calls for a little branching out, especially if it involves sprinkles.


One of the greatest temptations in life is sprinkles...cookies, cakes, doughnuts...it all tastes better with a little bit of colorful goodness on top. Just look at those wonderful sprinkles. The doughnut holes are even more appealing due to the colorful confections on top.


And the fact that they are mini....and the mini cinnamon roll too. That just makes it all that much better. No worries though....all the sugary and colorful mini goodness was balanced out with that plain old ordinary banana. The balance makes the fun foods okay to eat, right?

At least that is what I keep telling myself.
